Winter radish coleslaw

Winter Radish Coleslaw


Serves 4 as an accompaniment
Prep time 25 minutes


Lovely Christmassy colours in this salad. If you don’t like mayonnaise, try using yoghurt or even fromage frais.

Ingredients:
10 radishes, thinly sliced
1 small carrot, grated
100g white cabbage, thinly sliced
2 tbsp pumpkin seeds
2 tbsp mayonnaise
1 tsp Dijon mustard
1 tsp lemon juice

 
Chopping radishes

1. Place the sliced radishes,

Adding the pumpkin seeds

Stiring in mayonnaise

and mayonnaise,

 
Stiring all the ingredients together

into a large bowl and stir together really well.
2. Serve with homemade burgers, whole-meal buns and sweet cherry tomatoes.








Radish have a peppery flavour and a brilliantly crunchy texture. They are great for adding texture and colour to a salad. Different times of the year produce different colours like purple, red and white with varying degrees of spicyness.
